Chef Renaud Darmanin offers authentic cuisine, guided by instinct, combining flavour, balance and precision.
Drawing on his experience in renowned gourmet establishments, he has developed a personal vision of cuisine that is authentic and creative, which he has been refining in Marcolès since 2010.
A native of Auvergne and deeply attached to his region, he draws constant inspiration from its landscapes, produce and seasons, which he translates into every dish he creates.
In this medieval town, Chef Renaud Darmanin has, step by step, shaped the Auberge de la Tour, transforming this former village hotel-restaurant into a 4-star gastronomic and hospitality establishment, driven by his commitment and energy.
Recently, he has taken this approach a step further by creating his own vegetable garden, conceived as a natural extension of his cuisine.
Today, the Auberge de la Tour reflects his identity: a vibrant, welcoming establishment deeply rooted in its local area, where his cuisine combines innovation, a passion for local produce and a desire to create memorable experiences.
